Alfredo Sauce

“Butter, cream, egg yolk and two kinds of cheese are cooked together with a dash of freshly ground nutmeg to make a luxurious, classic Alfredo sauce. Buy a whole nutmeg and grate only as much as you need. The unmistakable flavor is well worth it.”
45 g butter
240 ml heavy whipping cream
salt to taste
1 g ground nutmeg
25 g grated Parmesan cheese
30 g grated Romano cheese
1 egg yolk
10 g grated Parmesan cheese
1. Melt butter or margarine in a saucepan over medium heat. Add heavy cream, stirring constantly. Stir in salt, nutmeg, grated Parmesan cheese, and grated Romano cheese. Stir constantly until melted, then mix in egg yolk. ( Do not add white!) Simmer over medium low heat for 3 to 5 minutes. Garnish with additional grated Parmesan cheese, if desired.

Optional extras: Mustard, Garlic, herbs and spices
