Custard Slices – S. A.


2 eggs xxxxxx 150ml cake flour
150ml sugar   10ml custard powder
1 liter milk   pinch salt
60 ml margarine (4 tablespoons)   cream crackers – or unsalted Saltines
100ml corn flour   Powdered sugar

Beat eggs and add sugar
Add dry ingredients and a 1/4/ of the milk
Mix well
Bring rest of milk and margarine to a boil
As soon as it starts to boil remove from heat and add mixture (flout etc) to the boiled milk
Stir until thickened – if lumps occur keep on stirring
Place cream crackers into square dish , layer milk mixture over and top up with a layer of cream crackers
Mix powdered sugar (icing sugar ) with some water till it forms a thicket paste but what will still run over the top
Refrigerate for a hour or so – voila custard slices!!!!!
